Behind the Scenes: A Day at the Bakery


Ever wondered what happens at Our Bakery before we flip the “Open” sign at 6 AM? Here’s a peek behind the curtain at
a typical day on SE Division Street.

4:00 AM — The Ovens Wake Up

Our head baker arrives while Portland is still asleep. The first task: fire up the ovens and pull the overnight
doughs from the proofer. Our sourdough loaves have been slowly fermenting for 24 hours and are finally ready for the
heat.

4:30 AM — Shaping Begins

The team starts shaping baguettes, boules, and batards. Each loaf is scored by hand — those beautiful slashes aren’t
just decorative, they control how the bread expands in the oven.

5:00 AM — Pastry Time

While the breads bake, our pastry baker rolls out croissant dough that was laminated the day before. Layer by layer,
butter from Willamette Valley Creamery and dough create those irresistible flaky sheets. Cinnamon rolls are glazed,
danishes are filled, and scones go into the oven.

5:30 AM — Custom Cakes

If we have custom cake orders — birthdays, weddings, special occasions — the cake decorator starts assembling and
decorating. Every custom cake is a one-of-a-kind creation.

5:45 AM — Final Touches

Fresh loaves come out golden and crackling. The display cases are loaded, Portland Roasting Company coffee is brewed,
and the shop fills with that unmistakable bakery aroma.

6:00 AM — Doors Open

Our regulars are already lined up. The first customers of the day grab their usual — a sourdough loaf and a coffee, a
bag of croissants for the office, or a cinnamon roll still warm from the oven.

By noon, our shelves are getting bare. By 3 PM on Sundays, we’re closed. And by 4 AM tomorrow, we’ll do it all over
again. That’s the life of Our Bakery — and we wouldn’t have it any other way.
